Ingredients:
  • 2 tablespoons chili powder
  • 2 teaspoons dried oregano
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon salt
  • 1 sweet potato, diced (1/4-inch pieces)
  • 1 can (about 15 ounces) black beans, rinsed and drained
  • 1 green bell pepper, chopped
  • 1 cup frozen corn
  • 1 onion, halved and thinly sliced
  • 1 jalapeño pepper*, seeded and minced
  • 4 cloves garlic, minced
  • ¼ cup water
  • 3 tablespoons lime juice
  • 1 tablespoon chopped fresh cilantro
  • ½ cup (2 ounces) shredded Monterey Jack cheese
  • 6 (10-inch) flour tortillas
  • *Jalapeño peppers can sting and irritate the skin, so wear rubber gloves when handling peppers and do not touch your eyes.

  • Instructions:
    1. Combine chili powder, oregano, cumin and salt in small bowl.
    2. Combine sweet potato, beans, bell pepper, corn, onion, jalapeño pepper and garlic in Crock-Pot™ Express Pressure Cooker. Sprinkle with seasoning mixture; mix well. Add water. Secure lid. Press MANUAL, set pressure to HIGH and time to 2 minutes. Make sure Steam Release Valve is in the "Seal" (closed) position. Press START/STOP.
    3. Once cooking is complete, quick release pressure. Stir in lime juice and cilantro. Top each tortilla with about 3/4 cup filling. Spoon about 2 tablespoons cheese in center of each tortilla. Fold up bottom and top edges of tortillas over filling; fold in sides and roll to enclose filling.
