Vietnamese Meatballs

Use this recipe to create a yummy bánh mì (sandwich) with this Vietnamese meatball recipe! This dish is made to be a comforting Vietnamese dish. Dump all ingredients into the stone insert and let the slow cooker do the rest.

Ingredients:

MEATBALLS:

  • 1 lb ground pork
  • 1/2 lb shrimp (peeled, deveined and minced)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp fish sauce
  • 1/2 yellow onion, diced
  • 5 cloves minced garlic
  • 1/2 cup canned water chestnuts (diced)
  • 1/4 cup Panko bread crumbs

TOMATOE SAUCE:

  • 4 cups tomatoes purée
  • 5 cloves minced garlic
  • 1/4 cup chicken broth
  • 1 TBSP sugar
  • 2 TBSP fish sauce
  • 1/4 tsp black pepper

SLURRY:

  • 1 TBSP water + 1 TBSP cornstarch

Instructions:

  1. Mix together all of your ingredients under MEATBALLS and form into equal size spheres/balls, set aside.
  2. In your @crockpot , mix all of your ingredients under TOMATO SAUCE (do this directly into the stone insert)
  3. Then add meat balls into your slow cooker and cook on high 4 hours or low 8 hours
  4. When theres ~10 mins remaining, add the slurry mixture to thicken the sauce up. If you don’t like it thicken, you can skip this step.
  5. Serve as a classic bánh mì (Vietnamese sandwich) with cucumbers, cilantro and pickled carrots and daikon OR crusty for dipping.
