*Unless you have a 5-, 6- or 7-quart Crockpot™ slow cooker, cut any roast larger than 21/2 pounds in half so it cooks completely.
Instructions:
Place roast in Crockpot™ slow cooker; cover with enchilada sauce. Add water, if desired. Cover; cook on LOW 6 to 8 hours. Remove beef to cutting board; shred with two forks. Serve in tortillas.
