The temperature is not adjustable. The lowest temperature that this slow cooker will heat to would be on the warm setting which heats to 175 degrees F. Thanks for your question.

We do not sell a replacement lid for the 2.5 quart Casserole Crock&trade; separately. The reason the lid includes a vent hole is to allow a gradual release of steam during the cooking process. Without this hole, the food would likely overcook due to excess pressure within the product. Thank you.
