We only advise you lock the lid when transporting the unit. Locking the lid while cooking can cause pressure to build within the unit. Too much pressure can cause the lid to shatter or the stoneware to crack. The hole in the lid is to allow any residual pressure to be released when the lid is locked for transport. Both High and Low stabilize at the same temperature (209&deg;F); it is just a matter of how long it takes to reach the simmer point. On High, it takes approximately 3-4 hours, whereas on Low, it takes approximately 7-8 hours to reach the simmer point. On the warm setting, your Crock-Pot&reg; slow cooker will be between 165&deg; and 175&deg; Fahrenheit. Please remember that these are all approximate temperatures and they can vary depending on what you are cooking. Thank you.
