Hello! The lid should only be latched for transporting purposes. Latching the lid during cooking will not allow it to expand under the heat properly and may cause the glass to shatter. Hello! In our units, both low and high stabilizes at 209&deg;F. The difference is the time it takes to reach that temperature. Low: 7-8 hours to reach the simmer point. We regularly employ rigorous third-party testing to ensure that our Slow Cookers meet or exceed all applicable laws, regulations and industry standards, including those related to lead content. Consumers should feel confident that our Slow Cookers are safe to use. The glaze of our ceramic pots is a silicate made of quartz, feldspar and clay. The glaze is covered over the pot, fired at high temperature to melt the glaze and then cooled down. The glaze liquid is then turned into coating the same as glass film on the surface of the pot. This does not contain PTFE &amp; PFOA. The FDA specifies allowable amounts of lead, cadmium and other substances. All the glazes that we use meet or exceed FDA requirements. CrockPot products are subject to REACH regulatory control and food grade testing which ensures that no harmful levels of any substances are present in our products, including Bisphenol-A (BPA). On your slow cooker, both High and Low stabilize at the same temperature 209&deg;F; it is just a matter of how long it takes to reach the simmer point. On High, it takes approximately 3-4 hours, whereas, on Low, it takes approximately 7-8 hours to reach the simmer point. On the warm setting, your slow cooker will achieve between 165-175&deg;F.
