Hello Josser! Thank you for your inquiry. Both low and high stabilizes at 209&deg;F. The difference is the time it takes to reach that temperature. Low: 7-8 hours to reach the simmer point. The time will not display while the warm setting counts down, that's perfectly normal. Some instruction booklets have a misprint that advises that the warm setting will have a visual display of the time counting down. That is false. We apologize for the confusion. Thank you for your question.
