On High, it takes approximately 3-4 hours, whereas on Low, it takes approximately 7-8 hours to reach the simmer point. Once food reaches the simmer point, total cook time is dependent on cut and weight of meat to reach the point of maximum flavor and texture potential. Most dishes can be prepared on either High or Low. This is uniform across all of our current models. Thank you for your question.

Yes, the stoneware is oven safe up to 400&deg;F. Please be advised, we recommend putting the stoneware in before pre-heating the oven, as it's made to heat up slowly and gradually. If you put the stoneware directly into a pre-heated oven, it may crack.

The Keep Warm setting is approximately 165 - 175 degrees F. Both the Low &amp; High settings reach 209 degrees F., but they cycle differently. Therefore, the High setting will still cook the food in a shorter period of time than the Low setting will. Please remember that these are all approximate temperatures and they can vary depending on what you are cooking. Thank you for your question.
