In 3 QT Crockpot™, combine oats, apricots, quinoa, rice, pumpkin seeds, salt and cinnamon. Stir in almond milk, 1 cup water, honey, coconut oil and vanilla.
Cover and cook on Low for 4 to 5 hours or High for 3 to 4 hours or until oats, quinoa and rice are tender. Set to Warm for serving.
Tips: • Serve with sliced bananas and fresh berries if desired.
• Substitute canola or grapeseed oil, or butter, for coconut oil if preferred.
