Power Porridge Slow Cooker Recipe

Ingredients:
  • 1 cup steel-cut oats
  • ⅓ cup chopped dried apricots
  • ¼ cup quinoa
  • ¼ cup brown rice
  • 1/4 cup chopped pumpkin seeds
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 4 cups almond milk
  • 2 tbsp honey
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
Instructions:
  1. In 3 QT Crockpot™, combine oats, apricots, quinoa, rice, pumpkin seeds, salt and cinnamon. Stir in almond milk, 1 cup water, honey, coconut oil and vanilla.
  2. Cover and cook on Low for 4 to 5 hours or High for 3 to 4 hours or until oats, quinoa and rice are tender. Set to Warm for serving.
  3. Tips: • Serve with sliced bananas and fresh berries if desired.
  4. • Substitute canola or grapeseed oil, or butter, for coconut oil if preferred.
