Pork Soup with Soba Noodles and Bok Choy Slow Cooker Recipe

Ingredients:
  • 2 tablespoons olive oil
  • 1 boneless pork loin roast (about 2 1/2 pounds), cut into matchstick pieces
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sugar
  • 1-2 teaspoons Chinese five-spice powder
  • 6 cups chicken broth
  • 1 ½ tablespoons fresh ginger, peeled and cut into thin slices
  • 3 cloves garlic, thinly sliced
  • 2 tablespoons soy sauce
  • 1 head bok choy, sliced
  • 1 pound soba noodles, cooked

Instructions:

 

  1. Heat oil in large skillet. Add pork, hoisin sauce, sugar and five-spice powder; cook and stir 5 to 7 minutes or until pork is browned. Remove pork mixture to Crock-Pot® slow cooker.
  2. Add broth, ginger, garlic, soy sauce and bok choy to slow cooker. Cover; cook on LOW 6 to 7 hours or on HIGH 3 to 4 hours.
  3. Stir in soba noodles. Cover; cook on HIGH 10 minutes or until just heated through.
  4. Serve hot and enjoy!
