Zuppa di Clams Slow Cooker Recipe

Ingredients:
  • 6 cups chicken broth
  • 16 shiitake mushrooms, cleaned and stems removed
  • 1 small red onion, diced
  • 1 pound chorizo sausage, thinly sliced
  • 3 cups tomato sauce
  • 2 cups dry white wine
  • 1 cup sweet red vermouth
  • 48 littleneck clams, scrubbed and rinsed
  • Hot cooked pasta (optional)
  • Crusty Italian bread (optional)
Instructions:
  1. Heat large skillet over medium heat. Add mushrooms, onions, and sausage; cook and stir 8 minutes or until onion is softened. Transfer to your Crockpot slow cooker.
  2. Add tomato sauce, wine, and vermouth to slow cooker. Cover; cook on LOW 6 to 7 hours or on HIGH 3 ½ to 4 hours.
  3. Add clams. Cover; cook on HIGH 10 to 15 minutes or until clams open. Discard any clams that do not open.
  4. Serve over pasta and with bread, if desired.
