Warm Blue Crab Bruschetta Slow Cooker Recipe

Ingredients:
  • 4 cups peeled, seeded and diced plum tomatoes
  • ¾ cup diced white onion
  • ⅓ cup olive oil
  • 2 tablespoons sugar
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons minced garlic
  • ½ teaspoon dried oregano
  • 1 pound lump blue crabmeat, picked over for shells
  • 1 teaspoon kosher salt
  • ¼ teaspoon cracked black pepper
  • ¼ cup minced fresh basil
  • 2 baguettes, sliced and toasted
Instructions:
  1. Combine tomatoes, onion, oil, sugar, vinegar, garlic and oregano in Crockpot™ slow cooker; stir to blend. Cover; cook on LOW 2 hours.
  2. Stir crabmeat, salt and pepper into slow cooker, taking care not to break up crabmeat. Cover; cook on LOW 1 hour. Fold in basil. Serve on toasted baguette slices.
