Ingredients:
4 cups peeled seeded diced plum tomatoes
1 pound lump blue crabmeat, picked over for shells
¾ cup diced white onion
⅓ cup olive oil
2 tablespoons sugar
2 tablespoons balsamic vinegar
2 teaspoons minced garlic
1 teaspoon kosher salt
½ teaspoon dried oregano
¼ teaspoon cracked black pepper
¼ cup minced fresh basil
2 baguettes, sliced and toasted
Instructions:
Combine tomatoes, crabmeat, onion, oil, sugar, vinegar, garlic, salt, oregano and black pepper in Crockpot™ Express Pressure Cooker; stir to blend. Secure lid. Press MANUAL PRESSURE, set temperature to LOW and time to 1 minute. Make sure Steam Release Valve is in the "Seal" (closed) position. Press START/STOP.
Once cooking is complete, quick release pressure. Stir in basil and serve on baguettes.
