Warm Blue Crab Bruschetta Express Pressure Cooker Recipe

  • 4 cups peeled seeded diced plum tomatoes
  • 1 pound lump blue crabmeat, picked over for shells
  • ¾ cup diced white onion
  • â…“ cup olive oil
  • 2 tablespoons sugar
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon kosher salt
  • ½ teaspoon dried oregano
  • ¼ teaspoon cracked black pepper
  • ¼ cup minced fresh basil
  • 2 baguettes, sliced and toasted
  1. Combine tomatoes, crabmeat, onion, oil, sugar, vinegar, garlic, salt, oregano and black pepper in Crockpotâ„¢ Express Pressure Cooker; stir to blend. Secure lid. Press MANUAL PRESSURE, set temperature to LOW and time to 1 minute. Make sure Steam Release Valve is in the "Seal" (closed) position. Press START/STOP.
  2. Once cooking is complete, quick release pressure. Stir in basil and serve on baguettes.
