Pulled Pork with Honey-Chipotle Barbecue Sauce Slow Cooker Recipe

Ingredients:
  • 1 tablespoon chili powder, divided
  • 1 teaspoon chipotle chili powder, divided
  • 1 teaspoon ground cumin, divided
  • 1 teaspoon garlic powder, divided
  • 1 teaspoon salt
  • 1 bone-in pork shoulder (3 ½ pounds), trimmed*
  • 1 can (15 ounces) tomato sauce
  • 5 tablespoons honey, divided
  • *Unless you have a 5-, 6- or 7-quart Crockpot® slow cooker, cut any roast larger than 2 1/2 pounds in half so it cooks completely.
Instructions:
  1. Coat inside of Crockpot® slow cooker with nonstick cooking spray. Combine 1 teaspoon chili powder, ½ teaspoon chipotle chili powder, ½ teaspoon cumin, ½ teaspoon garlic powder and salt in small bowl. Rub pork with chili powder mixture. Place pork in slow cooker.
  2. Combine tomato sauce, 4 tablespoons honey, remaining 2 teaspoons chili powder, ½ teaspoon chipotle chili powder, ½ teaspoon cumin and ½ teaspoon garlic powder in large bowl. Pour tomato mixture over pork in slow cooker. Cover; cook on LOW 8 hours.
  3. Remove pork to large bowl; cover loosely with foil. Turn slow cooker to HIGH. Cover; cook on HIGH 30 minutes or until sauce is thickened. Stir in remaining 1 tablespoon honey. Turn off heat.
  4. Remove bone from pork and discard. Shred pork using two forks. Stir shredded pork back into slow cooker to coat well with sauce.
  5. Serve and enjoy!
