Combine all ingredients except for chicken into your Crockpot® Slow Cooker. Stir by hand until a smooth sauce is formed. Add chicken thighs, coating them in the sauce.
Cover; cook on LOW 6 to 7 hours or on HIGH 4 to 5 hours. Open your slow cooker and shred chicken, which should be easy to pull apart.
Serve with jalapeños and coleslaw on a roll and enjoy!
