Potato Cheddar Soup Slow Cooker Recipe

Ingredients:
  • 2 pounds new red potatoes, cut into ½-inch cubes
  • 3 cups vegetable broth
  • ¾ cup carrots, coarsely chopped
  • 1 medium onion, coarsely chopped
  • ½ teaspoon salt
  • 1 cup half-and-half
  • ¼ teaspoon black pepper
  • 2 cups (8 ounces) shredded Cheddar cheese
Instructions:
  1. Place potatoes, broth, carrots, onion, and salt into your Crockpot® Slow Cooker.
  2. Cover; cook on LOW 6 to 8 hours or on HIGH 3 to 3 ½ hours, or until vegetables are tender.
  3. Stir in half-and-half and pepper. Cover; cook on HIGH 15 minutes. Turn off heat.
  4. Remove lid; let stand 5 minutes. Stir in cheese until melted.
  5. Serve hot and enjoy!
