Coat inside of Crockpot™ slow cooker with nonstick cooking spray. Add water. Arrange pears stem side up. Spoon lemon juice over pears. Cover; cook on HIGH 2 ½ hours. Remove pears; set aside.
Combine fruit spread, ginger, cornstarch and vanilla in small bowl; stir until cornstarch dissolves. Whisk mixture into water in slow cooker until blended. Cover; cook on HIGH 15 minutes or until sauce thickens slightly. Spoon sauce over pears.
