Pears with Apricot-Ginger Sauce Slow Cooker Recipe

Ingredients:
  • ¼ cup water
  • 4 whole firm pears (about 2 pounds total), peeled with stems attached
  • 1 tablespoon lemon juice
  • 2 tablespoons apricot fruit spread
  • 1 teaspoon grated fresh ginger
  • ½ teaspoon cornstarch
  • ½ teaspoon vanilla
Instructions:
  1. Coat inside of Crockpot™ slow cooker with nonstick cooking spray. Add water. Arrange pears stem side up. Spoon lemon juice over pears. Cover; cook on HIGH 2 ½ hours. Remove pears; set aside.
  2. Combine fruit spread, ginger, cornstarch and vanilla in small bowl; stir until cornstarch dissolves. Whisk mixture into water in slow cooker until blended. Cover; cook on HIGH 15 minutes or until sauce thickens slightly. Spoon sauce over pears.
