Ice Cream Bread Pudding Slow Cooker Recipe

  • 2 pints vanilla bean ice cream, melted
  • 4 whole eggs
  • ⅓ cup sugar
  • 2 tsp vanilla extract
  • ½ tsp sea salt
  • 1 loaf challah bread (approx. 6 cups) cut into 1-inch cubes
  • 1 can apple pie filling
  • ½ cup dulce de leche, divided
  1. In a large mixing bowl add melted ice cream, eggs, vanilla, and salt. Whisk until everything is combined. Butter your Crockpot™ slow cooker. Add half of the challah bread to the bottom of the slow cooker.
  2. Top with the apple pie filling. Drizzle half of the dulce de leche. Add remaining bread. Pour the ice cream mixture. Drizzle remaining dulce de leche.
  3. Cover and cook on HIGH for 2 hours. Once it is done, serve warm with a scoop of ice cream!
