Chicken Provençal Slow Cooker Recipe

Ingredients:
  • 3 ½ pounds pounds boneless, skinless chicken thighs, each cut in half
  • 1 medium red bell pepper, cut into ¼-inch thick slices
  • 1 medium yellow bell pepper, cut into ¼-inch thick slices
  • 1 medium onion, thinly sliced sliced
  • 1 can (28 ounces) plum tomatoes, drained
  • ¼ cup chicken broth
  • 3 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon dried thyme
  • ½ teaspoon ground fennel seed
  • 1/2 cup chopped fresh basil
  • 3 strips orange peel
Instructions:
  1. Combine chicken, bell peppers, onion, tomatoes, broth, garlic, salt, thyme, fennel seed, and orange peel in Crockpot® slow cooker.
  2. Cover; cook on LOW 7 to 9 hours or on HIGH 4 to 6 hours.
  3. Sprinkle with basil and serve fresh.
