Best-Ever Roast Slow Cooker Recipe

This literal beef and potato dish lives up to its name! Cooked in mushroom soup for extra richness.

Ingredients:
  • 1 can (10 ½ ounces) condensed cream of mushroom soup, undiluted
  • 1 package (about 1 ounce) dry onion soup mix
  • 1 boneless beef chuck shoulder roast (3 to 5 pounds)*
  • 4 to 5 medium potatoes, unpeeled and quartered
  • 1 package (16 ounces) baby carrots
  • *Unless you have a 5-, 6- or 7-quart Crockpot® slow cooker, cut any roast larger than 2 ½ pounds in half so it cooks completely.
Instructions:
  1. Combine mushroom soup and dry soup mix in Crockpot slow cooker; stir to blend. Place roast in slow cooker.
  2. Cover; cook on LOW for 4 hours.
  3. Stir in potatoes and carrots. Cover; cook on LOW for 2 hours.
  4. Serve and enjoy.
