Slow Cooker BBQ Meatballs

These are so easy to make using a Crockpot! These are made using my Homemade BBQ Rub and then drizzled in your favorite sauce.

Ingredients:

  • 1 pound ground beef
  • 1/3 cup breadcrumbs
  • 1/2 cup finely chopped onions
  • 2 garlic cloves Minced
  • 1 egg

Homemade BBQ Seasoning:

  • 2 teaspoons brown sugar or sweetener
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste

BBQ Sauce:

  • 1 cup bbq sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon liquid smoke

Instructions:

  1. Add the ground beef, breadcrumbs, onions, garlic, egg, and 1/2 of the spices to a large bowl. Reserve the remaining spices for the BBQ sauce.
  2. Using clean hands, combine the ingredients and form one large ball. Form and shape the mixture into your desired size. I like 2 tablespoons in size.
  3. Spray the bottom of the slow cooker with cooking oil. Place the meatballs in the slow cooker.
  4. Cook the meatballs on High for 2 hours. (You can also do Low for 4 hours).
  5. While the meatballs cook, combine the BBQ sauce, remaining BBQ rub, liquid smoke, and Worcestershire sauce.
  6. Open the slow cooker. Do not stir the meatballs. They haven't fully cooked and may fall apart. Carefully, drain any excess fat. Pour the BBQ sauce over the meatballs. Do not stir.
  7. Cook the meatballs on High for an additional 1 hour and 30 minutes on High (3 hours on Low).
  8. Open the slow cooker and stir. Use a meat thermometer to ensure the meatballs have finished cooking. Insert the thermometer and ensure a temperature of at least 160 degrees.
  9. Cool before serving.
