2 racks pork baby back ribs, cut into 3- to 4-rib sections
2 small red onions, finely chopped
3-4 cloves garlic, minced
1 cup packed brown sugar
1 cup ketchup
½ cup cider vinegar
1 juice of 1 lemon
2 tbsp Worcestershire sauce
1 tbsp hot pepper sauce
½ tsp chili powder
1 cup beef broth
Instructions:
Press BROWN/SAUTÉ on Crockpot™ Express Pressure Cooker; heat oil on HIGH. Add ribs in batches; cook, uncovered, 7 minutes or until browned. Remove ribs to large plate. Add onions and garlic; cook and stir 3 to 5 minutes or until softened. Stir in brown sugar, ketchup, vinegar, lemon juice, Worcestershire sauce, hot pepper sauce and chili powder; cook and stir 5 minutes. Remove half of sauce to large bowl; set aside.
Add ribs and broth to Crockpot Express; turn to coat. Secure lid. Press MEAT/STEW, set pressure to HIGH and time to 30 minutes. Make sure Steam Release Valve is in “Seal” (closed) position. Press START/STOP.
Once cooking is complete, natural release pressure 10 minutes. Release remaining pressure. Remove ribs to large bowl with reserved sauce; turn to coat. Skim fat from top of cooking liquid. Press BROWN/SAUTÉ on Crockpot Express; cook liquid, uncovered, on HIGH 5 to 7 minutes or until thickened. Serve sauce with ribs.
