Ale'd Pork and Sauerkraut Slow Cooker Recipe

Ingredients:
  • 1 jar (32 ounces) sauerkraut, undrained
  • 1 ½ tablespoons sugar
  • 1 can (12 ounces) ale or dark beer
  • 1 boneless pork shoulder or pork butt roast (3 1/2 pounds)*
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • *Unless you have a 5-, 6- or 7-quart slow cooker, cut any roast larger than 21/2 pounds in half so it cooks completely.
Instructions:
  1. Place sauerkraut in Crockpot™ slow cooker. Sprinkle with sugar; add ale. Place pork, fat side up, on top of sauerkraut mixture; sprinkle evenly with salt, paprika, garlic powder and black pepper. Cover; cook on HIGH 6 hours.
  2. Remove pork to large serving platter. Remove sauerkraut using slotted spoon; arrange around pork. Spoon cooking liquid over sauerkraut as desired.
