Italian Sausage Sandwiches with Burrata Slow Cooker Recipe

Juicy Italian sausage, sweet onions, and peppers simmer low and slow in a rich tomato-balsamic sauce, then get piled high onto garlicky ciabatta and finished with creamy burrata and fresh basil.

Ingredients:

    For the sausage, onions & peppers:

    • 2 sweet onions
    • 1 package (19-ounces) Italian sausage (mild or hot)
    • 3 bell peppers
    • 1 can (14.5-ounces) fire-roasted tomatoes
    • 1 can (28-ounces) peeled tomatoes with basil
    • 8 garlic cloves, ends removed
    • 1/2 teaspoon garlic powder
    • 1 teaspoon Italian seasoning
    • 1 teaspoon kosher salt
    • 1/4 cup balsamic vinegar

    For serving:

    • Ciabatta
    • Olive oil
    • Garlic salt
    • Burrata
    • Fresh basil

Instructions:

  1. Thinly slice onions and bell peppers, peel garlic cloves, and crush peeled tomatoes with your hands (they’ll break down further as they cook). Set aside. Add onions, sausage links, peppers, fire-roasted tomatoes, hand-crushed tomatoes, garlic cloves, garlic powder, Italian seasoning, kosher salt, and balsamic vinegar to your Crock-Pot® Slow Cooker. Stir gently to combine.
  2. Cover and cook on HIGH for 5 hours.
  3. After 5 hours, remove lid and cook uncovered for 1 1/2 hours to reduce sauce.
  4. Use a slotted spoon to scoop out sausages, peppers, and onions. Serve on toasted ciabatta brushed with olive oil and garlic salt, then top with burrata and fresh basil. Enjoy!
