BBQ Chicken Salad Slow Cooker Recipe

We love a salad with all the extras, and this easy BBQ Chicken Salad will be your new summer favorite! Ours includes crisp-fried tortilla chips and a hint of jalapeño to spice it up.

Ingredients:

    Chicken Salad:

    • 2 cups BBQ sauce
    • 1 tablespoon garlic powder
    • 2 boneless skinless chicken breasts
    • 2 ears corn, shucked
    • Vegetable oil, for frying
    • 2 corn tortillas, cut into 2 x ¼-inch strips
    • 6 cups romaine lettuce, roughly chopped
    • 1 cup cherry tomatoes, halved
    • 1 cup black beans, drained and rinsed
    • ½ cup cilantro, chopped
    • ½ cup pickled red onions
    • 4 ounces pepper jack cheese, cubed

    BBQ Ranch Dressing:

    • ½ cup buttermilk
    • ½ cup mayonnaise
    • ½ cup sour cream
    • ¼ cup cilantro, chopped
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • ¼ teaspoon sea salt
    • ¼ cup BBQ sauce
    • 1 jalapeño, seeded

Instructions:

  1. Combine the BBQ sauce and garlic powder in your Crock-Pot® slow cooker.
  2. Add the chicken and corn and turn to coat.
  3. Cover and cook on HIGH for 2 ½ hours.
  4. Add more flour, as necessary, until you have a soft but workable dough.
  5. Meanwhile, in a medium skillet over medium heat, add 1 inch of vegetable oil. Once glistening, add the tortilla strips and cook until golden brown, about 3 to 4 minutes.
  6. Using a slotted spoon transfer to a paper towel-lined plate and allow to cool completely.
  7. Make the ranch dressing. In a blender, add the buttermilk, mayonnaise, sour cream, cilantro, onion powder, garlic powder, salt, BBQ sauce, and jalapeño.
  8. Blend until smooth. Dressing will keep in an airtight container for up to 1 week.
  9. Remove corn from the slow cooker and let it cool before removing kernels with a sharp knife.
  10. Using two forks, shred chicken in the slow cooker, and toss with the BBQ sauce.
  11. Arrange the lettuce on a serving platter. Top with corn, tomatoes, chicken, cheese, tortilla strips, black beans, cilantro, and pickled onions.
  12. Drizzle with the BBQ ranch dressing.
  13. Serve, and enjoy!
