Christmas Plum Pudding

Ingredients:
  • 21/2 cups reduced-fat (2%) milk
  • 4 eggs, slightly beaten
  • 10 slices white bread, cut into 2-inch cubes
  • 2 cups all-purpose flour
  • 1 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking soda
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground mace
  • 1/2 cup orange juice
  • 1 tablespoon vanilla
  • 1 cup raisins
  • 1 cup dried plums
  • 1/2 cup dried candied fruit mix
Instructions:
  1. Coat inside of Crockpot™ slow cooker with nonstick cooking spray. Combine milk and eggs in large bowl. Add bread; set aside to soak.
  2. Combine flour, brown sugar, cinnamon, baking soda, cloves and mace in large bowl. Add orange juice and vanilla; stir until smooth. Add raisins, plums and candied fruit; stir until blended.
  3. Place bread in Crockpot™ slow cooker. Pour fruit mixture over bread. Cover; cook on LOW 6 to 7 hours or on HIGH 2 to 4 hours. Serve warm.
