Vegan Sloppy Joes with Black-Eyed Peas
The next time you're in the mood for a flavorful, sloppy burger filled with vegan goodness, give this black-eyed pea sloppy joe recipe a try. Slow cooked down to a thick and rich stew, these black-eyed peas blend with the vegetable melody and zesty spices for a heart-warming good meal. Serve the sloppy joes on your choice of buns for a lunch or dinner that will impress even your meat-loving friends.

This recipe calls for two different sets of ingredients – one to be slow cooked in the morning before you head out the door for the day and the second to be added at night, to complete the meal.

Morning Ingredients:

  • 1/3 cup dry black-eyed peas
  • 1/3 cup carrots, chopped
  • 1/6 cup millet
  • 2 tablespoons minced bell pepper
  • 1 clove garlic, minced
  • 1 teaspoon Cajun seasoning
  • 2 cups water
  • 1/8  to 1/4 teaspoon liquid smoke, to taste

Evening Ingredients:

  • 1 cup minced greens (collards, kale, etc.)
  • 2 tablespoons tomato paste
  • Salt and pepper, to taste
  • 4 buns, for serving


  1. Combine black-eyed peas, carrots, millet, bell pepper, garlic and Cajun seasoning in the bottom of your slow cooker.
  2. Add water and stir well to combine.
  3. Add liquid smoke, to taste.
  4. Cover and cook on LOW for 7 to 9 hours.
  5. When initial cook time is up, stir the minced greens and tomato paste into your slow cooker.
  6. Cover and continue to cook on LOW for 30 minutes to 1 hour.
  7. Before serving, add salt and pepper to taste, as well as more Cajun seasoning as desired.
  8. Serve vegan sloppy joe mixture onto open buns.
