Rustic Tomato and Roasted Red Pepper Soup

It's hard to imagine a better pairing than tomato soup and grilled cheese. It serves as a winning combination for a Sunday family dinner and it even soothes the throat and chases the chill away when you're feeling under the weather. With just a little prep, you may also find you get a couple of extra meals from a batch of soup that can be placed in the freezer or saved in the fridge for lunch during the week.

Rustic Tomato and Roasted Red Pepper Soup
This season, give your traditional tomato soup recipe a little extra zest with this slow-cooked recipe. Warm, comforting and filled with lots of satisfying vegetables and spices, this rustic tomato and roasted red pepper recipe is the ultimate dipping soup for your perfectly grilled, cheesy sandwich.


  • 2 red bell peppers, seeded and sliced
  • 4 medium Roma tomatoes, sliced
  • 1 sweet onion, quartered 
  • 2 celery sticks, chopped
  • 1 medium carrot, chopped
  • 1 jalapeño, halved and seeded
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1/2 cup tomato paste
  • 2 cups reduced-sodium vegetable broth
  • 2 teaspoons sugar
  • 1 teaspoon Italian seasoning
  • 1/2 cup orzo, uncooked
  • Salt and pepper, to taste
  • For toppings: fresh basil, Parmesan cheese, croutons or bread cubes


  1. Heat oven to 350 degrees.
  2. Place all vegetables on baking sheet with garlic and olive oil.
  3. Heat for about 45 minutes, until slightly charred.
  4. Use an immersion blender or food processor to blend vegetables - including jalapeño. 
  5. Transfer to slow cooker once blended. (Smoothness depends on personal preference.)
  6. Add tomato paste, vegetable broth, sugar, Italian seasoning, orzo and salt and pepper.
  7. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until orzo is cooked.
  8. Top with your choice of fresh basil, Parmesan cheese or croutons or bread crumbs.
  9. Serve warm into bowls with a grilled cheese sandwich to accompany.
