3 Tailgate Recipes for Bacon Lovers
All bacon lovers know that this tasty strip of meat isn't just meant for breakfast. For bacon aficionados, there are ways to incorporate the juicy breakfast food into almost any meal. Use your slow cooker to create these three recipes that will make bacon the star player of your next tailgate:
1. Bacon-Wrapped Chicken
This barbeque-inspired dish brings the smells of summer to the crisp autumn tailgates. Break out your Crock-Pot® Programmable Casserole Crock Slow Cooker for this recipe.
- 4 chicken breasts, boneless and skinless
- 4 apples, peeled and chopped
- 8 to 12 slices bacon
- 1 onion, diced
- 1 1/2 cups barbeque sauce
- 2 tablespoons lemon juice
- 1/2 cup brown sugar.
Wrap each chicken breast in bacon strips and place them in your slow cooker. In a bowl, combine the apples, onion, barbeque sauce, lemon juice and brown sugar. Mix well and then pour the mixture over the chicken breasts. Cover and cook on low for 6 to 8 hours.
2. Bacon Cheeseburger Dip
A different way to enjoy the classic tailgate burger, this unique dip will serve as an impressive appetizer.
- 1/2 pound ground beef
- 8 slices bacon
- 1 package cream cheese, cubed
- 1 package American cheese, shredded
- 1 can diced tomatoes.
First cook the bacon in a skillet over medium heat until crisp. Drain the cooked bacon on paper towels and crumble into small pieces and reserve 2 tablespoons of it for a garnish. In the same skillet, cook the beef on medium heat for 5 to 7 minutes, stirring occasionally, until it is cooked all the way through. Drain the beef and then return it to the pan, reducing the heat to low. Add in the cream cheese, American cheese, diced tomatoes and bacon crumbles. Cook until the mixture is melted together and then transfer to your slow cooker. Cook on low heat for 2 to 3 hours. Serve with crumbled bacon as a garnish and chips for dipping.
3. Cheesy Bacon Ranch Potatoes
Baked potatoes are a great addition to any tailgate party. Try adding in cheese, bacon and ranch and see how excited your crowd of fans gets.
- 3 pounds small potatoes, chopped
- 6 slices bacon
- 1 1/2 cups shredded cheese
- 2 tablespoons chives, chopped
- 2 onions, diced
- 1 tablespoon Ranch dressing.
In a skillet, cook the bacon strips over medium heat until they are crisp. Drain the bacon strips on a paper towel and crumble into small pieces. Line your slow cooker with aluminum foil and coat with cooking spray. Lay an even layer of potatoes down in the slow cooker. Top with cheese, bacon, onions and Ranch and repeat this twice more. Cover with aluminum foil and cook on high for 3 to 4 hours. Garnish with chives.
