Nutty Pumpkin Pie Pudding
Add a little something different to your Pie Day celebration with a pumpkin pie pudding instead of the classic dish. Your taste buds will thank you later when you take that first bite into the rich, soft and nutty masterpiece.

  • 1 can pumpkin (15 ounces)
  • 2/3 cup evaporated milk
  • 1/3 cup sugar
  • 1/4 cup butter, melted
  • 2 tablespoons pumpkin pie spice
  • 1-layer-size yellow cake mix
  • 1 cup walnuts or pecans, toasted and chopped.

Use non-stick cooking spray to coat the inside of your slow cooker. Then, bring together the pumpkin, sugar, evaporated milk and 1 tablespoon of the pumpkin pie spice. Mix well and spread evenly across the bottom. In a bowl, stir together the cake mix, nuts and remaining 1 tablespoon of pumpkin pie spice. Sprinkle the dry mixture over the pumpkin pudding. Then pour the melted butter over the entire mixture in your slow cooker. Cover and cook on high for 2 1/2 hours. Let the dessert cool uncovered for 30 minutes before serving. Add a topping if desired and enjoy!

Recipes can be increased or decreased by one quart size per the cooking instructions. For smaller sauces and dips that calls for 3 quarts or less, it is not recommended to alter the unit size.
