Hearty Mexican Dishes to Make in Your Slow Cooker

You can't have a Mexican dinner without beans. Try making these in your slow cooker for a no-fuss approach to your fiesta foods.
- 3 cups dry pinto beans, rinsed and picked through
- 1/2 jalapeno pepper, seeded and chopped
- 1 onion, peeled and quartered
- 3 cloves garlic, minced
- 2 teaspoon pepper
- 1 teaspoon salt
- 64 ounces low sodium chicken broth or stock
- 9 cups water.
Place the beans, jalapeno pepper, onion, garlic and salt and pepper in your slow cooker. Pour in the broth and add water until the beans are completely covered in liquid. Place the lid on your slow cooker and heat on high for 8-9 hours. When you can, look to see if water has evaporated. If so, pour in some more throughout the cooking process to make sure the beans don't dry out. Once the time has passed, strain the liquid into a separate bowl. Mash the beans and add the liquid back in to achieve just the right amount of thickness. Serve immediately with chips, crackers, or even by itself!
