Green Dishes to Serve This St. Patrick's Day

Chances are, you've already got fun plans to celebrate St. Patrick's Day. While you're decorating your home and prepping to host your friends during the evening, you're going to want to make some hearty dishes that will keep them full through the festivities.

Use your slow cooker to make one of these tasty green meals, courtesy of Crock-Pot Girl™ Jenn Bare. 

Slow Cooker Split Pea with Ham 
Ham, peas, carrots - what's not to love about this savory soup?

You'll need:

  • 3 cups split peas
  • 4 cups chicken or vegetable broth
  • 4 cups water
  • 2 cups yellow onion, diced
  • 1 cup carrot, diced
  • 1/2 cup celery, diced
  • 1 potato, chopped
  • 8 ounces ham, diced
  • 1 tablespoon ginger, minced
  • 1 teaspoon dried marjoram
  • Salt and pepper to taste

Wash and drain peas, then place them in your slow cooker. Add broth, water, onion, carrots, celery, ham, ginger, marjoram and potatoes, stirring until ingredients are well-blended. Cover the slow cooker and set on low for 7 to 8 hours, or high for 4 to 5.

Slow Cooker Easiest Lemon Broccoli
Broccoli is the ideal side dish for any meat or vegetarian entree.

You'll need:

  • 1 pound broccoli
  • 1/2 cup water
  • 1/4 cup white wine
  • 1 lemon, zest and juice
  • Salt and pepper to taste

Add water, white wine, salt and pepper to the slow cooker and stir until combined. Toss in your broccoli and cover, then cook for an hour on high. Top with lemon juice and zest before serving!

Slow Cooker Paleo Dessert Apples
No meal is complete without a decadent dessert.

You'll need:

  • 4 green apples, cored
  • 1/2 cup coconut butter, melted
  • 1/4 cup almond or cashew butter
  • 2 tablespoons cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 4 tablespoons shredded unsweetened coconut
  • 1/2 cup dried apricots, figs or dates
  • 1 cup water

In a large bowl, combine coconut butter, almond butter, cinnamon, nutmeg and salt. Pour water in the bottom of the slow cooker, then place apples in the appliance. Spoon the mixture into the hollowed cores of each apple, then place dried fruits on top. Drizzle coconut and cinnamon over apples, cover the stoneware and cook for about 2 to 3 hours on low. 

Due to the slow ramp up, and even heating of a slow cooker, recipes featured on this site can be cooked in a range of slow cooker sizes. Recipes can be increased or decreased by one quart size per the cooking instructions. For smaller sauces and dips that calls for 3 quarts or less, it is not recommended to alter the unit size.
