What's better than a plate of eggs, bacon and home fries? A delicious and warm slow-cooked breakfast casserole that combines all of your favorite breakfast foods into one. This breakfast casserole recipe is sure to be a crowd pleaser for all of your tired New Year's Day guests.
- 1 bag frozen hash brown potatoes
- 12 eggs
- 1 cup milk
- 1 pound bacon
- 1 cup Cheddar cheese, shredded
- 1 onion, diced
- 1/2 green pepper, diced
- 1/2 red pepper diced.
First, cook and drain each strip of bacon and then cut it into small pieces. After coating your slow cooker with cooking spray, add in half of the bacon, half of the potatoes, half of the cheese, half of the chopped onion and half of the chopped peppers. Repeat those layers again. In a large bowl, beat together the 12 eggs and cup of milk. Once it is mixed well pour it over the layered casserole in your slow cooker. Cover and cook on low for 4 hours or on high for 8 hours. Let the casserole cool, then serve with coffee and fresh orange juice and enjoy!
Nutella and Banana French Toast Casserole
To balance out the breakfast casserole of hearty eggs, whip up this sweet and savory French toast casserole dish. The mouth-watering flavors of this decadent French toast will be even better than the irresistible aroma it creates.
- 1 loaf challah bread, cut into cubes
- 6 large eggs
- 2 cups milk
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 tablespoons Nutella, and more for topping
- 1 tablespoon unsalted butter
- 1 tablespoon brown sugar
- 4 bananas, sliced.
Place the challah bread cubes in the bottom of your slow cooker after coating it with cooking spray. In a bowl, combine the eggs, milk, vanilla, cinnamon and Nutella. Whisk until the eggs are fully blended. Then pour the mixture over the cubed challah bread. Mix the cubes of bread so that each piece is fully saturated with the mixture. Cover and cook on high for 2 hours. In a saucepan, bring the butter over medium heat. After slicing the bananas and coating them in brown sugar, add them to the saucepan. Heat bananas for about 2 minutes on each side until browned. Once the French toast is finished cooking, cut into slices and top with the bananas. Serve with extra Nutella or maple syrup on top and enjoy!
