2 Bacon-tastic Recipes

Bacon is one of those ingredients that can turn any dish from good to amazing. Whether you bake or fry it, serve it with something savory or douse it in chocolate for an interesting snack, it's sure to be a favorite among your hungry guests. Try these two recipes - one for brunch and the other for dinner - for an entire day full of the tasty meat. Both are made to perfection and require little effort when you use your Crock-Pot® Casserole Crock Slow Cooker.

1. Bacon and Eggs Casserole
This is the perfect main dish to serve when you're having guests over for a brunch party. Start it as soon as you wake up and run last minute errands while it cooks. By the time you get back, you'll be able to make the finishing touches and have it ready for your friends and family. Talk about multitasking!

You'll need:

  • 1 pound bacon, chopped
  • 8 eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 green bell pepper, chopped
  • 1/4 cup sliced green onions
  • 1 to 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper

Line your slow cooker with foil and lightly cover with cooking spray. Crack eggs into a large bowl and whisk together, slowly adding in the bacon, milk, bell pepper, onions, and salt and pepper. Sprinkle in 3/4 cup of cheese and set aside the remainder. Pour mixture into slow cooker and heat on high for 2 to 3 hours. To make sure it's cooked through, poke the center with a thermostat, and if it reads 160 degrees, it's ready for the next step. Sprinkle the remaining cheese on top and cook for 10 more minutes so it melts. Remove from foil and enjoy!

2. Bacon Ranch Pasta
Great things happen when you combine pasta and bacon. Try this dish for dinner tonight, and you'll find that it quickly becomes a favorite in your household.

You'll need:

  • 16 ounces spaghetti pasta
  • 1 pound bacon, chopped
  • 1 ounce ranch dressing
  • 10.75 ounces condensed cream of chicken soup
  • 1 cup red onion, diced
  • 1/4 cup freshly grated Parmesan

Lightly coat your slow cooker with cooking spray. In a large bowl, mix bacon, ranch, cream of chicken and red onion together. Pour into slow cooker and hear on low for 6 hours. When there are about 15 minutes remaining on the timer, cook the pasta as directed on the package. Drain and add to the bacon ranch mixture, and serve.

Due to the slow ramp up, and even heating of a slow cooker, recipes featured on this site can be cooked in a range of slow cooker sizes. Recipes can be increased or decreased by one quart size per the cooking instructions. For smaller sauces and dips that calls for 3 quarts or less, it is not recommended to alter the unit size.
