Pumpkin Soups to Cook This Crocktober

October is marked by a myriad of tastes and smells - one of the most popular of which is pumpkin. From spiced lattes infused with this flavor to delectable desserts sprinkled with its touch, pumpkin can be found everywhere this season.

Searching for an inventive way to serve the innards of your carved jack-o'-lantern? Consider a slow cooker pumpkin soup, which can be easily customized with your favorite spices, flavors and treats.

Conventional Slow Cooker Pumpkin Soup
Crock-Pot Girl™ Jenn Bare offers a couple of recipes that are perfect for any fall-themed party. If you're a fan of more traditional fall flavors, opt for this slow cooker soup from the slow cooker connoisseur herself. You'll want to break out your Crock-Pot® Digital Slow Cooker with iStir Stirring System for this dish, as the automatic mixing feature contributes to the tantalizing texture of your soup.

Begin by setting your slow cooker to high and adding 1 ounce of butter and 2 pounds of peeled, chopped pumpkin. After the butter has melted, stir the ingredients until the pumpkin is well-coated, then allow it to sit for an hour. Stir in 2 teaspoons of sugar and 2 1/2 cups of chicken stock, then place a medium onion in the slow cooker. Cover the dish and let it simmer on low for 8 to 9 hours, or 4 to 5 hours on high. 

Remove the onion then puree the soup in a blender before serving. Add 1 cup of milk, then garnish with a dash of nutmeg, salt and cinnamon. Serve with a small spoonful of sour cream. 

Putting More Protein in Your Pumpkin Soup
If you're a fan of more filling dishes, consider this creative take on slow cooker pumpkin soup that uses peanut butter as one of its main ingredients. Add 2 cups of pumpkin puree, 2 cups of chicken broth, 1/4 cup diced onion, 1 teaspoon paprika and 2 tablespoons of butter to your slow cooker. Mix the ingredients together, then set the slow cooker on low and let it sit for 2 to 3 hours. When the soup is smooth, add 1/8 cup peanut butter and 1/4 cup milk, stirring again until the soup has an even consistency. Allow the dish to cook for an additional 15 to 30 minutes, and season with salt, pepper and nutmeg before serving. Don't forget to add a dollop of sour cream and a handful of croutons while enjoying.

If you're feeling particularly crafty, serve your soup in smaller, hollowed pumpkins that give your soup a more festive feel.
