Heating Up Holidays: Sweet Potato Casserole

There are certain foods that hold a staple place at your Thanksgiving feast. Sweet potatoes are among the necessities, as these versatile vegetables can be prepared in a number of delicious and decadent ways. Spice up your sweet potato selection this holiday by trying out this crafty casserole from Crock-Pot Girl™ Jenn Bare. 

Slow Cooker Sweet Potato Casserole
While you could mash, roast or bake your sweet potatoes, try blending them with medley of other vegetables by making a slow cooker sweet potato casserole for your Thanksgiving guests. Begin by lightly coating your Crock-Pot® Casserole Crock Slow Cooker with nonstick cooking spray. In a large bowl, combine 36 ounces of drained and mashed sweet potatoes, 1/3 cup melted butter, 2 tablespoons granulated sugar and 2 tablespoons brown sugar. Stir until the ingredients are well-blended, then use a beater to add 1 tablespoon orange juice, 2 eggs and 1/2 cup milk. Pour the mixture in your slow cooker.

In a smaller bowl, mix 1/3 cup pecans, 1/3 cup brown sugar, 2 tablespoons flour and 2 tablespoons melted butter. Drizzle this mixture over the sweet potatoes, coating the surface evenly. Cover the stoneware and allow the casserole to cook for 3-4 hours on high. Be sure to serve warm!

Other Sweet Potato Dishes to Try
If you're a fan of sweet potatoes, or you're just looking for a more unconventional spin on the vegetable, consider one of the following recipes that use sweet potatoes as the main ingredient.

  • Slow Cooker Candied Yams: Want a sweet potato dish with a sweeter spin? Try Jenn Bare's Candied Yams, which call for 6-8 peeled and sliced sweet potatoes that have been placed at the bottom of a slow cooker. Blend 1/2 cup orange or pineapple juice, 2 teaspoons vanilla extract, 1 teaspoon pumpkin pie spice, 1/2 cup brown sugar and 1/2 teaspoon salt in a bowl, then cover the potatoes. Cover the dish and cook for 6-7 hours on low, or 3-4 hours on high. Top the stoneware with 1 cup of mini marshmallows and allow it to broil in the oven directly before serving.
  • Slow Cooker Cranberry Sweet Potatoes: This festive and fruity dish is perfect for adding a little bit of tang to your Thanksgiving. Mix 1/4 cup orange juice, 8 tablespoons butter, 1/4 cup brown sugar, 2 teaspoons ground cinnamon,1/2 teaspoon salt and 1 cup sweetened dried cranberries in your slow cooker, cover and set on high. Peel 4-5 pounds of sweet potatoes, then slowly stir them into the slow cooker. Cover the stoneware and cook for 3-4 hours on high. After the potatoes are soft, mash them with a potato masher or wooden spoon.

If you're looking to add a bit of variety to any of your sweet potato dishes, there are a few ingredients that blend well with other flavors in the dish. Consider adding 1 cup peeled and chopped apple slices, which can add both crunch and sweet flavor to the meal. For a more festive fall flavor, add a bit of prepared pumpkin to your recipe.

Recipes can be increased or decreased by one quart size per the cooking instructions. For smaller sauces and dips that calls for 3 quarts or less, it is not recommended to alter the unit size.
