There are certain foods that hold a staple place at your Thanksgiving feast. Sweet potatoes are among the necessities, as these versatile vegetables can be prepared in a number of delicious and decadent ways. Slow Cooker Sweet Potato Casserole
While you could mash, roast or bake your sweet potatoes, try blending them with medley of other vegetables by making a slow cooker sweet potato casserole for your Thanksgiving guests. Begin by lightly coating your Crock-Pot® Casserole Crock Slow Cooker with nonstick cooking spray. In a large bowl, combine 36 ounces of drained and mashed sweet potatoes, 1/3 cup melted butter, 2 tablespoons granulated sugar and 2 tablespoons brown sugar. Stir until the ingredients are well-blended, then use a beater to add 1 tablespoon orange juice, 2 eggs and 1/2 cup milk. Pour the mixture in your slow cooker.
In a smaller bowl, mix 1/3 cup pecans, 1/3 cup brown sugar, 2 tablespoons flour and 2 tablespoons melted butter. Drizzle this mixture over the sweet potatoes, coating the surface evenly. Cover the stoneware and allow the casserole to cook for 3-4 hours on high. Be sure to serve warm!
