Slow Cooker Low-Carb Holiday Recipes

'Tis the season for expanding waistlines. 

Amidst the fountains of fondue, potato-rich sides and chocolate-covered stocking stuffers, it's hard to find dishes on the holiday table that fit in with your healthy lifestyle. It's easier to justify that extra helping of Aunt Mildred's blue-ribbon cheesecake since you know you only get it once a year, but your body won't be able to ignore those carbs as well as your mind can.

Instead of suffering this holiday season, consider setting out certain healthier dishes that are low-carb by nature. Use your slow cooker to prep some of these options, and you'll have a much easier time mentally reconciling that second piece of pie. 

Veggie-Filled Green Bean Casserole
Someone is going to bring along a green bean casserole to your holiday celebration - why not try this low-carb, healthy take on the seasonal classic? Begin by coating your Crock-Pot® Casserole Crock™ Slow Cooker with nonstick spray. Place 1 1/2 pounds of fresh green beans in a medium-sized pot, add enough water to just cover the vegetables, then allow the green beans to boil for about 10 minutes. After draining, place the green beans in the slow cooker. 

In a large bowl, combine 1 cup sliced red pepper, 1 cup carrots, 1 cup kale, 1 cup sliced green pepper, 2 cups chopped mushrooms, 1 clove minced garlic, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/2 cup milk and 1 10-ounce can mushroom soup. After the ingredients are well-blended, pour the mixture over the green beans, then coat with 1 cup of shredded cheddar cheese. Cover the slow cooker and allow the casserole to cook for 2 1/2 hours on high, or 4 1/2 hours on low. 

Colorful Breakfast Frittata
Few foods are as filling and nutritious as a festive frittata. Skip the stove and prepare this holiday favorite with your slow cooker - this is the perfect breakfast food for those holiday guests you're looking to impress with your culinary finesse.

Spray your slow cooker with a nonstick spray - you can use your rectangular stoneware if you want a more symmetrical dish, but the meal is well-served for any slow cooker. Begin by cracking 12 large eggs into a bowl, then beating well. Pour the eggs in the slow cooker, then add your favorite vegetable by the cup-full. We recommend a cup of sliced red pepper, chopped onion, kale and green beans. Don't forget to top with spices - like salt, pepper and parsley - and 1 cup of cheddar cheese. Cook for 2-3 hours on low and serve warm.

Due to the slow ramp up, and even heating of a slow cooker, recipes featured on this site can be cooked in a range of slow cooker sizes. Recipes can be increased or decreased by one quart size per the cooking instructions. For smaller sauces and dips that calls for 3 quarts or less, it is not recommended to alter the unit size.
