Cheesy Rice and Chicken Casserole

Cheesy Rice and Chicken Casserole
Satisfying and filling, this cheesy rice and chicken casserole has all the staples, making it a great meal for dinner any night of the week.

Ingredients:

  • 4 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 medium onion, chopped
  • 1 1/2 cups chicken stock
  • 1 (10.5 ounce) can low-sodium cream of chicken condensed soup 
  • 1 (8 ounce) box yellow rice, cooked according to package
  • 2 cups shredded cheddar cheese, or cheese blend
  • 1 (15 ounce) can of corn, drained

Directions

  1. Season chicken with salt and pepper and add to slow cooker.
  2. Top with chopped onions.
  3. In a bowl, combine chicken stock and cream of chicken condense soup.
  4. Pour over chicken.
  5. Cover and cook on LOW for 7 to 8 hours or on HIGH for 4 hours.
  6. Remove chicken and use two forks to shred.
  7. Return chicken to slow cooker and add cooked rice, cheese and corn.
  8. Mix until shredded cheese is melted.
  9. Serve warm.

Southwestern-Style Rice and Chicken Casserole
If you loved the aforementioned rice and chicken casserole so much that you want to make it again - both because of its mouth-watering deliciousness and its simplicity - you're in luck because we have a zesty southwest twist on it. Kick things up the next time you make this recipe by incorporating the spices cayenne and cumin as well as black beans and corn.

Ingredients:

  • 1/2 (8 ounce) can tomato sauce
  • 1/2 (15 ounce) can black beans, drained and rinsed
  • 1/2 medium green bell pepper, chopped
  • 1/2 medium red onion, chopped
  • 2 cloves garlic, minced
  • 1/2 (3.5 ounce) can green chiles
  • 1/2 (15 ounce) can whole kernel corn 
  • 1/2 cup long grain rice
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1 chicken bouillon cube
  • 4 chicken breasts
  • 1 cup water
  • 1/2 (14 ounce) can crushed tomatoes
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup Colby Jack cheese or a mix of cheddar and Jack
  • Fresh parsley, chopped

Directions

  1. Evenly spread tomato sauce along bottom of Crock-Pot® 3.5-Quart Casserole Crock Slow Cooker.
  2. Add black beans, pepper, onion, garlic, green chiles, corn, rice, cumin, chili powder, paprika and the chicken bouillon cube.
  3. Stir ingredients well, then add water and crushed tomatoes.
  4. Place four chicken breasts on top of ingredients.
  5. Top with salt and pepper.
  6. Cover and cook on HIGH for 4 1/2 hours, until chicken is cooked through.
  7. Remove chicken and use two forks to shred.
  8. Return to slow cooker and stir all ingredients well.
  9. Top with shredded cheese.
  10. Cover and let sit for about 10 minutes, until cheese is melted.
  11. Garnish with fresh parsley and serve warm.
