Raspberry Blueberry Muffin Recipe for Your Multi-Cooker

Raspberry Blueberry Muffins
Fluffy and fruit-filled, these raspberry blueberry muffins are a great way to start any morning off on the right foot. For a little extra sweetness, top these muffins with the streusel topping recipe below.

Ingredients:

  • 1 egg
  • 1/2 cup milk
  • 1/2 cup butter or margarine, melted
  • 1 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons grated lemon peel
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blackberries

Directions

  1. Select the bake function and set the temperature to 400 degrees.
  2. Allow the Multi-Cooker to preheat.
  3. Prepare a 12-cup muffin tin with paper liners.
  4. Beat egg with fork in a large bowl.
  5. Add milk and 1/2 cup melted butter.
  6. Stir in flour, sugar, brown sugar, baking powder, lemon peel, cinnamon and salt, until just moistened.
  7. Fold in raspberries and blackberries.
  8. Pour batter evenly into muffin liners.
  9. Sprinkle each one with streusel from recipe below, if desired.
  10. Bake for 20 to 25 minutes, until golden brown.
  11. Let cool before serving.

Streusel Topping
For a sweet and nutty optional topping, consider frosting your freshly-baked muffins with this confectionery recipe.

Ingredients

  • 1/4 cup all-purpose flour
  • 2 tablespoons butter, softened
  • 2 tablespoons sugar
  • 1 teaspoon finely grated lemon peel
  • 2 tablespoons finely chopped walnuts

Directions

  1. In a medium bowl, mix flour, butter, sugar and lemon peel until crumbly,
  2. Stir in walnuts. 
  3. Before baking muffins, frost each one with streusel topping.
