Tomato Basil Pulled Chicken

Tomato Basil Pulled Chicken
For a fresh and zesty Italian-inspired meal, slow cook tomato basil pulled chicken. The balsamic vinegar cuts right through the ingredients to reveal a light yet savory flavor. Serve this dish with a warm Italian loaf of bread and Caesar salad to complete the homemade meal.

Ingredients:

  • 4 tablespoons extra virgin olive oil
  • 2 medium garlic cloves, minced or finely grated
  • 1 1/2 pounds Roma or cherry tomatoes, roughly chopped (about 5 cups total)
  • 3 tablespoons balsamic vinegar
  • 1/2 teaspoon kosher salt, divided
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1/4 cup thinly sliced basil

Directions

  1. Mix together oil, garlic, tomatoes, balsamic vinegar and 1/4 teaspoon of salt.
  2. Layer bottom of slow cooker with 2 cups of tomato mixture.
  3. Season chicken on both sides with remaining salt.
  4. Add chicken to slow cooker and top with another 2 cups of tomato mixture. Set aside a small amount for topping.
  5. Cover and cook on HIGH for 4 to 6 hours, until chicken is cooked through.
  6. Remove and shred using two forks.
  7. Return to slow cooker and mix to combine.
  8. Top dish with remaining tomato mixture and sliced basil.
