Savory Bread Pudding with Sausage, Peppers and Spinach

It's a meal that requires little meal prep or work, but yields delectable results.

Savory Bread Pudding with Sausage, Peppers and Spinach
By slow cooking bread pudding, you get the perfect crisp crust with a warm and creamy inside for a tantalizingly good texture that matches its excellent flavor. The sweet pork sausage, vegetables and cheese combine for a terrifically hearty meal that everyone will enjoy.

Ingredients:

  • 12 ounces sweet Italian sausage, casings removed
  • Olive oil
  • 1 1/2 cups chopped baby portobello mushrooms
  • 1 (8-ounce) jar roasted red peppers, drained and chopped (about 1 cup)
  • 1 (10-ounce) box frozen chopped spinach, thawed, drained and squeezed dry
  • 6 large eggs
  • 1 3/4 cups whole milk
  • 2 1/2 cups sharp cheddar cheese, grated
  • 1/2 cup chopped fresh parsley
  • Sea salt and black pepper
  • 8 cups hearty white bread, torn into 1-inch chunks
  • Parmesan cheese, for garnish
  • Extra parsley, for garnish

Directions

  1. Select Brown/Sauté and set to high.
  2. Allow Multi-Cooker to preheat.
  3. Add olive oil and sausage to heat, breaking up the pieces, until browned.
  4. Add mushrooms, peppers and spinach, cooking for about 5 minutes.
  5. In a bowl, combine eggs, milk, cheese, parsley and salt and pepper.
  6. Fold in bread cubes, mixing gently to coat.
  7. Add to sausage mixture in Multi-Cooker, folding gently to coat well.
  8. Press Start/Stop to change function to Slow Cooker.
  9. Cover and cook on low for 3 1/2 to 4 hours.
  10. Serve warm.
