3 Light Slow-Cooked Dishes for Spring

The warmer weather and sunnier days are officially in full spring and that likely means you're looking for some fresh, new inspiration for meal time. Healthier, lighter, spring-inspired meals are what this season is all about and when you're equipped with the innovative and versatile Crock-Pot® 5-in-1 Multi-Cooker, creating deliciously wholesome meals is easier than ever.

You can even switch between functions for recipes that require both baking and sauteing or roasting and then slow cooking. Skinny Ratatouille
Colorful and healthy, this ratatouille dish is hearty and tasty - a dish that the entire family will enjoy.

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium eggplant, chopped
  • 1 onion, chopped
  • 2 zucchinis, chopped
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 2 tablespoons tomato paste
  • 1 tablespoon chopped fresh thyme
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 4 plum tomatoes, chopped
  • 1/4 cup white wine
  • 2 tablespoons sliced fresh basil.

Directions

  1. Select Brown/Saute and set to HI.
  2. Allow Multi-Cooker to preheat.
  3. Add oil to cooking bowl.
  4. Add eggplant and onion, cooking for 5 minutes or until eggplant starts to soften.
  5. Add zucchini, red and yellow peppers, tomato paste, thyme, garlic and salt.
  6. Cook and stir continuously for 10 minutes or until vegetables are tender.
  7. Garnish with basil before serving.

Roasted Salmon with Citrus Salsa
Light and zesty, this salmon is roasted to perfection and then topped with the bright, citrus salsa to complete this spring-inspired dish.

Citrus Salsa Ingredients:

  • 1 ruby red grapefruit
  • 1 navel orange
  • 1 ripe avocado, peeled, pitted and chopped
  • 1 jalepeno pepper, seeded and finely chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • Pinch granulated sugar.

Ingredients for Salmon:

  • 2 tablespoons olive oil
  • 1 teaspoon finely grated lemon zest
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • Pinch pepper
  • 4 salmon fillets, skin on (about 5 ounces each).

Directions

  1. Peel grapefruit and orange with a sharp knife, removing all of the white pith.
  2. Working over a bowl to catch the juice, cut between the membranes to release citrus segments and juice.
  3. Cut segments into 1/2-inch pieces.
  4. Stir segments and juice with avocado, jalepeno, green onions, lime juice, oil, salt and sugar.
  5. Refrigerate for 15 minutes before serving.
  6. In a small bowl, stir together the oil, lemon zest, lemon juice, garlic, salt and pepper.
  7. Brush all over salmon.
  8. Place rack in inner pot.
  9. Select Roast function and set temperature to 300 degrees.
  10. Allow Multi-Cooker to preheat.
  11. Place salmon on rack.
  12. Cover and roast for 25 to 30 minutes or until fish just starts to flake.
  13. Carefully remove salmon.
  14. Garnish with citrus salsa before serving.

Very Berry Dessert Topping
No evening is complete without a little sweet afterwards. With this light, sweet and fruity dessert recipe, you don't have to feel guilty for indulging!

Ingredients:

  • 3 cups sliced strawberries
  • 2 cups blueberries
  • 2 cups blackberries
  • 1/2 cup packed brown sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons cornstarch.

Directions

  1. Select Bake and set temperature to 300 degrees.
  2. Allow Multi-Cooker to preheat.
  3. Add strawberries, blueberries and blackberries to cooking bowl.
  4. Add brown sugar, lemon juice and cinnamon and toss to combine.
  5. Sprinkle with cornstarch and toss to combine.
  6. Bake for 25 minutes or until filling is thick and bubbling.
  7. Serve slightly warm over ice cream or frozen yogurt.
  8. Enjoy!
