2 Ways to Prepare Chicken in Your Slow Cooker

There are a multitude of ways to prepare chicken in your slow cooker. This weekend, break out your Crock-Pot® Lift & Serve Hinged Lid 6-Quart Oval Slow Cooker and try out one of these creative, mouth-watering recipes for a hearty chicken dinner that the entire family will enjoy.

Cashew Chicken
The recipe for this cashew chicken is simple to follow, yet bursting with flavor. Sweet and savory, it's best served over a bed of rice or noodles.


  • 1 1/2 pounds chicken thighs
  • 6 cloves garlic, chopped
  • 3 tablespoons fish sauce
  • 3 tablespoons oyster sauce
  • 2 tablespoons white sugar
  • 1/4 teaspoon white pepper
  • 1 bunch scallions, chopped
  • 1/2 white onion, chopped
  • Water to cover
  • 1 pound raw cashews.

Cut each chicken thigh into about 6 small pieces and place them in the bottom of your slow cooker. Cover them with the garlic, fish sauce, oyster sauce, white sugar, white pepper, scallions and white onion. Pour enough water into the slow cooker to cover the entire mixture. Cover and cook on high for 5 hours. Remove lid and sprinkle the raw cashews on top, then heat for another 30 minutes. Serve warm over rice or noodles and enjoy!

Italian-Style Chicken
Italian food is always guaranteed to deliver on zest and heartiness but simmering this chicken with white wine and the addition of savory kalamata olives gives it a truly irresistible aroma and even better taste.


  • 12 chicken thighs, skinned
  • 1 teaspoon salt, divided 
  • 1/2 teaspoon freshly ground black pepper, divided
  • 1 teaspoon olive oil
  • 1 1/2 tablespoons minced garlic
  • 1/4 cup dry white wine
  • 3 tablespoons tomato paste
  • 3 tablespoons crushed red pepper
  • 1 can diced tomatoes, drained
  • 1/4 cup sliced kalamata olives, pitted
  • 2 tablespoons fresh flat-leaf parsley, chopped.

Sprinkle chicken thighs with salt and pepper, then heat with olive oil in a skillet over medium heat for about 2 minutes on each side until lightly browned. Then transfer chicken thighs to slow cooker. Add the garlic to the empty pan, stirring constantly. Then add in the dry white wine, scrapping to loosen the brown bits. Bring the wine mixture to your slow cooker and pour over the chicken. Add in the tomato paste, crushed red pepper and diced tomatoes. Cover and cook on high for 4 hours. Add in remaining salt and pepper as well as the olives and parsley. Serve warm and enjoy!
