3 Ways to Incorporate Avocados into Your Slow Cooker

Those who love avocados know there are endless ways to eat these delicious green treats. Make guacamole, add avocado to your sandwich or even cut it in half and eat it with a spoon with a little salt and olive oil. The possibilities are endless. But did you know about all of the avocado concoctions you can create you in your slow cooker? Below are three healthy recipes for incorporating avocado into your next slow cooker meal:

1. Creamy Avocado Soup
There's nothing like a good soup recipe, especially as the fall weather begins to roll in. This creamy avocado soup is not only tasty, but healthy too.

Ingredients:

  • 3 cups chicken or vegetable stock
  • 3 ripe avocados (peeled and mashed)
  • 1 large onion (peeled and chopped)
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro
  • 2 garlic cloves, minced
  • 1 teaspoon oregano
  • 1 bay leaf
  • Salt and pepper.

Directions
Add the stock, mashed avocado, onion, garlic, cilantro, oregano, salt and the bay leaf to your Crock-Pot® 6-Quart. Smart Slow Cooker with WeMo®. Cover the slow cooker and turn on low heat for 6 to 8 hours. If you are on a time crunch, you can cook on high heat for 3 to 4 hours. Once the soup is cooked all the way through, remove the bay leaf and blend the hot soup to puree it. Add in lime juice, salt and pepper for taste. Once it's cooled, you'll have a terrific avocado soup that's served best with a dollop of sour cream and tortilla chips!

2. Turkey Avocado Wraps
Spice up your classic turkey wrap using a slow cooker, some bacon and avocados. For a healthier option, replace tortilla wraps with lettuce leaves.

Ingredients:

  • 4 slices of bacon (sliced)
  • 2 pounds lean ground turkey
  • Cooking spray
  • 3/4 cup barbeque sauce
  • 2 tablespoons taco seasoning
  • 1 tomato (diced)
  • 1 ripe avocado (peeled and mashed)
  • Tortilla wraps or washed lettuce leaves.

Directions
In a skillet, cook bacon on medium heat until done. Add turkey to skillet, cooking for 4 to 6 minutes. After spraying the bottom of your slow cooker, add the turkey and bacon mixture along with taco seasoning, barbecue sauce and onion. Mix well and heat on low for 5 to 6 hours. Once cooked, use a fork to break up the meat. Create wraps with cooked turkey meat by adding mashed avocado and diced tomatoes to tortillas shells or lettuce leaves, taste depending.

3. Avocado Quinoa
A slight twist on a Mexican dish, this avocado quinoa is a light meal that's quite easy to prepare.

Ingredients:

  • Cooking spray
  • 1 can black beans (rinsed and drained)
  • 2 cups quinoa
  • 5 cups water
  • 1 1/2 cup salsa
  • 2 ripe avocados (peeled and sliced)
  • 1/2 cup cilantro
  • 1 tomato (diced)
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder.

Directions
Lightly coat the bottom of your slow cooker with cooking spray before adding a layer of black beans evenly at the bottom. Top the beans with water and quinoa, then sprinkle cumin, salt and garlic powder evenly over that. Then spread salsa on top of that layer and cook on high for 2 hours or low for 4 hours. Serve quinoa dish with diced tomatoes, cilantro and sliced avocado on top. A great dish for a hungry family, this avocado quinoa will be a crowd favorite at the dinner table!
