Pumpkin Dishes You Can Make in Your Slow Cooker

Keep Crocktober rolling with some tasty pumpkin recipes for your slow cooker. The rich, nutty flavor and the soft flesh of the vegetable create the ultimate taste and texture for a variety of pumpkin recipes. Find your local pumpkin patch and spend the day picking out the best ones to bring back to your kitchen!

Pumpkin Apple Dessert
The perfect dessert for a cool fall evening, this pumpkin apple treat will melt in your mouth. Although there are quite a few ingredients, both prep and cook time are relatively short.

Ingredients:

  • 1 can apple pie filling
  • 2 cups flour
  • 1 1/4 cups brown sugar, packed
  • 1 cup pumpkin, canned or fresh
  • 3/4 cup egg product
  • 1/3 cup vegetable oil
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon baking soda.

Directions
Grease the inside of your Crock-Pot® 6-Quart Programmable Cook & Carry™ slow cooker and spread the apple pie filling evenly. Combine the remaining ingredients in a large bowl and use electric beaters to blend the mixture until smooth. Pour the mixture over the apple pie filling. Cover your pot and cook on high for 1 1/2 to 2 hours.

Pumpkin Turkey Chili
This festive take on the classic chili dish is the perfect Sunday night meal and if you make enough, you'll have a tasty concoction to enjoy for the rest of the week.

Ingredients:

  • 1 pound turkey meat
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic, finely chopped
  • 1 can diced tomatoes
  • 1 can pumpkin puree
  • 1 cup water
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • pinch of salt and pepper.

Directions
Cook turkey over the stovetop on high heat with olive oil, stirring constantly until browned and no longer pink. Get rid of any remaining fat. Transfer the turkey to your slow cooker and mix in the remaining ingredients. Cover and set on low heat for 3 hours. Enjoy!

Pumpkin Baked Beans
An excellent source of Vitamin A, pumpkin adds more nutrition to a side dish of baked beans.

Ingredients:

  • 3 cans baked beans
  • 1 onion, chopped
  • 1/2 cup brown sugar, packed
  • 2 tablespoons mustard
  • 1 cup pumpkin puree
  • 1/2 cup molasses
  • 1 teaspoon pumpkin spice
  • pinch of salt and pepper.

Directions
Combine all of the ingredients in your large slow cooker, stirring gently to combine them. Cook on high heat for 5 to 6 hours or on low heat for 8 to 10 hours. Add salt and pepper if desired.

Pumpkin Curry
Thick and creamy, curry is another great soup for warming up after a brisk autumn day outside. This is another great dish that makes great leftovers for the rest of the week.

Ingredients:

  • 3 pounds pumpkin, seeded, skinned and chopped
  • 14 ounces coconut milk
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 2 tablespoons red curry paste
  • 2 teaspoons turmeric
  • 2 teaspoons paprika
  • 1 teaspoons ground cumin
  • 2 cups water.

Optional additions:

  • 2 chicken breasts, sliced into cubes
  • 2 cups carrots, chopped
  • 2 sweet potatoes, chopped.

Directions
Combine the chopped pumpkin, onion, pepper, curry paste, coconut milk and spices into your slow cooker. Cover and cook on low for 2 to 3 hours until the pumpkin becomes tender. If you would like to add the additional vegetables and chicken to your curry, add those ingredients in with the rest and cook for 2 additional hours. Serve with rice if desired.
