Hearty Fall Stews That Serve as Perfect Comfort Foods

There's no question that a hearty fall stew is one of the ultimate comfort foods. Not only will it please your taste buds, but your other senses as well. Harvest Pork Stew
With seasonal vegetable butternut squash and the addition of two sweet apples, this stew is the essence of fall.

Ingredients:

  • 1 1/2 pounds boneless pork, cut and cubed
  • 3 cups butternut squash, cubed
  • 2 apples, cored and cubed
  • 2 large potatoes, peeled and chopped
  • 1 onion, chopped
  • 3 cups chicken broth
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, finely minced
  • 1 bay leaf
  • 1/4 teaspoon rubbed sage
  • 1/4 teaspoon dried rosemary, crushed
  • 1/2 teaspoon salt.

Directions
First, lightly brown the pork in the oil until opaque and firm. Then move to your slow cooker and add in all remaining ingredients. Cook on high for 1 hour. Reduce heat to low and simmer for another 4 hours until tender.

Spicy Beef Curry Stew
This spicy beef stew certainly brings the heat and will warm up not just your body but your taste buds too.

Ingredients:

  • 1 pound beef stew meat, cubed
  • 1 cup beef broth
  • 2 large sweet potatoes, peel and chopped
  • 1 teaspoon olive oil
  • 2 teaspoons curry powder
  • 1 jalapeno pepper, diced
  • 1 red bell pepper, diced
  • 1 onion, sliced and quartered
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, chopped
  • salt and pepper, to taste.

Directions
Brown beef in a skillet with olive oil over medium heat. Remove from the heat and season beef with salt and pepper, saving the juices. Add the garlic, ginger, and jalapeno in the skillet for 2 minutes until tender. Season with curry powder. In the bottom of your slow cooker, place the onion. Top with the browned beef and then add in the skillet mixture as well as the beef broth. Cover and cook on low for 6 to 8 hours.

Mushroom Lentil Barley Stew
This vegetarian take on a hearty fall stew is just as wholesome and filling. It's easy to prepare and requires no special attention.

Ingredients:

  • 2 quarts vegetable broth
  • 1 quart water
  • 1/2 cup white wine
  • 2 cups button mushrooms, sliced
  • 1 ounce dried shiitake mushrooms, crumbled
  • 3/4 cup dry brown lentils
  • 3/4 cup pearl barely, uncooked
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, diced
  • 1 onion, diced
  • 2 teaspoons minced garlic
  • 2 teaspoons dried savory
  • 3 bay leaves
  • 1 teaspoon dried basil
  • salt and pepper, to taste.

Directions
In your slow cooker, combine all of the ingredients. Cook on high for 4 to 6 hours or on low for 10 to 12 hours. Before serving, be sure to remove bay leaves from dish.

Recipes can be increased or decreased by one quart size per the cooking instructions. For smaller sauces and dips that calls for 3 quarts or less, it is not recommended to alter the unit size.
