Thanksgiving Potatoes 101: Slow Cooker Essentials
Creamy, buttery, crispy or fluffy - there are a number of ways to create the perfect potato dish this Thanksgiving. No matter which potato variety you plan to whip up for this year's big meal, there are a few important things to keep in mind when it comes to these tasty spuds.
The more starchy the potatoes, the creamier the mashed potato dish. Not only do they fall apart more easily, but starchy potatoes are best for absorbing all of that dairy. When it comes to potatoes, you can never use too much butter. Mashed potatoes are one of the most popular dishes at the Thanksgiving table and best of all, they're one of the simplest dishes to make.
- 5 pounds medium potatoes, peeled and chopped
- 1 cup sour cream
- 12 tablespoons butter, cut into 1/2 inch cubes
- Salt and pepper
- 2 cups milk, warm
- 2 tablespoons sliced chives.
In your slow cooker, combine the chopped potatoes, butter, salt and pepper. Add 1 cup of water then cover and cook on high for about 4 hours, until potatoes are tender. Once tender, add in sour cream and warm milk. Mash potatoes until smooth and fluffy, garnish with chives and enjoy!
Sweet Potato Casserole
Savory and delectable, a sweet potato casserole is best when topped with melted marshmallows or a layer of pecans.
- 4 cups mashed sweet potatoes
- 1/2 cup granulated sugar
- 1/3 cup butter, melted
- 3 teaspoons light brown sugar
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extra
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/3 cup heavy whipping cream
- 3 cups mini marshmallows (optional).
Pecan Topping Ingredients:
- 3/4 cups light brown sugar
- 1/4 cup all-purpose flower
- 3/4 cups pecans, chopped
- 2 tablespoons butter, mixed.
Lightly coat the inside of your slow cooker with butter. In a bowl, combine sweet potatoes and the following seven ingredients. Beat at medium speed until smooth. Add in whipping cream and stir well. Spoon mixture into your slow cooker. If making the pecan topped version, in a small bowl combine butter, pecans, flour and light brown sugar and sprinkle over the sweet potatoes. Cover and cook on high for 3 to 4 hours. If opting for the marshmallow topping, omit the pecan topping step and cook on high for 3 to 4 hours. Add marshmallows to sweet potato casserole 15 to 20 minutes before serving.
