Slow Cooker Recipes for Friendsgiving

Before you head home to spend the holidays with family, you may be taking part in a new set of traditions with friends and neighbors. Impress your friends this season by whipping up a few tasty new dishes. Let others take care of the more traditional Friendsgiving items and take a crack at these two creative slow-cooked recipes. If you're cooking for a crowd, use your Crock-Pot 7-Quart Manual Slow Cooker to make either of these zesty dishes.

Mushroom Bread Pudding
Bring something new to the Friendsgiving table this year with this savory recipe for mushroom bread pudding. You're friends are guaranteed to love it so much, that it'll be the first item on the menu at next year's celebration.

Ingredients:

  • 4 cups bread cubes
  • 1 1/2 pounds wild mushrooms, trimmed
  • 4 large eggs
  • 2 cups half-and-half
  • 1/2 cup flat-leaf parsley, finely chopped
  • 1/2 cup shallots, finely chopped
  • 2 tablespoons butter, unsalted
  • 2 large garlic cloves, finely chopped
  • Salt and pepper, to taste.

Directions
Tear mushrooms into pieces that are about 1/4-inch-thick. In a skillet, cook shallots and butter over medium heat, stirring occasionally, for 3 minutes. Add in mushrooms, 1/2 teaspoon salt and 1/2 teaspoon pepper and cook for about 15 minutes. Add parsley and garlic and cook for another 2 minutes then remove from heat. In a bowl, whisk together eggs, half-and-half, salt and pepper. Stir in the mushroom mixture and bread cubes until well coated. Let stand for 20 minutes or until the bread absorbs the egg mixture. Pour the entire mixture into your slow cooker, cover and cook on low for 4 to 8 hours. Serve warm.

Cranberry Apple Cobbler Cake
Friendsgiving isn't complete without a classic dessert recipe. This twist turns the traditional cranberry cobbler into a soft and irresistible cake.

Ingredients:

  • 4 cups apples, sliced
  • 1 cup cranberries, fresh or frozen
  • 1 box yellow cake mix
  • 1/2 cup butter, melted
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon vanilla
  • 1/2 cup packed brown sugar.

Directions
Be sure that your slow cooker is greased with butter or cooking spray before your begin. Then add sliced apples, cranberries, vanilla, brown sugar and 1 teaspoon of ground cinnamon into your slow cooker. In a separate bowl, mix the dry yellow cake mix with the remaining teaspoon of cinnamon. Add the dry mix to your slow cooker and drizzle with melted butter. Cover and cook on high for 3 hours or until fruit bubbles over the edge. Add whipped cream on each serving if desired.

Due to the slow ramp up, and even heating of a slow cooker, recipes featured on this site can be cooked in a range of slow cooker sizes. Recipes can be increased or decreased by one quart size per the cooking instructions. For smaller sauces and dips that calls for 3 quarts or less, it is not recommended to alter the unit size.
