Try This Tasty Take on Shepherd's Pie

This March, honor your the Irish heritage by dining on some of the most traditional dishes the culture has to offer. Corned beef and cabbage is a favorite meal to serve on St. Patrick's Day, but another favorite among the Irish is shepherd's pie, a tasty dish that combines meats and vegetables in one savory plate.

The best part about shepherd's pie is that you can use many of your favorite leftovers as ingredients. Try this scrumptious slow cooker take on shepherd's pie to serve to your family and friends.

Lamb Vindaloo Shepherd's Pie
Substitute lamb for ground beef in this take on the holiday favorite. This dish lends itself well to a variety of vegetables, so bring out your favorites to drizzle on top.

You'll need:

  •  2 pounds leg of lamb, chopped into 1-inch cubes
  • 4 cups plain yogurt
  • 3 tablespoons ground cumin
  • 2 tablespoons ground coriander
  • 2 tablespoons ground cardamom
  • 1 Fresno chili
  • 1 jalapeno
  • 2 tablespoons extra virgin olive oil
  • 3 russet potatoes
  • 3 medium parsnips
  • 1/2 cup skim milk
  • 2 tablespoons butter
  • 2 cups tomato paste
  • 2 tablespoons turmeric
  • 4 tablespoons red curry paste
  • 4 cloves garlic, minced
  • 1/2 inch ginger root, minced
  • 3 tablespoons tamarind 
  • 1 medium onion, diced
  • 3 medium carrots, diced
  • 1 bag frozen peas
  • 1 can coconut milk
  • Salt and pepper to taste

Directions:
The night before you serve your shepherd's pie, combine 1 cup of yogurt, olive oil, half of the Fresno chili, half of the jalapeno, cumin, coriander and cardamom. When the ingredients are well blended, add the pieces of lamb, stir them around so they're completely coated, cover with plastic wrap and refrigerate. 

To make the curry sauce, combine 3 cups yogurt, tomato paste, tamarind and turmeric. In your slow cooker, add peas, carrots, onion and coconut milk. Stir together, top with the lamb mixture, then the curry sauce. Cook the ingredients for three hours on high. In a separate saucepan, boil potatoes and parsnips together, then mash with milk and butter. When the three hours is up, top the dish with mashed potatoes, as well as any additional vegetables you desire.

Due to the slow ramp up, and even heating of a slow cooker, recipes featured on this site can be cooked in a range of slow cooker sizes. Recipes can be increased or decreased by one quart size per the cooking instructions. For smaller sauces and dips that calls for 3 quarts or less, it is not recommended to alter the unit size.
