Slow Cooker Meals for when the Kids are Home

Some of the kids' favorite meals can be made in a snap using you slow cooker. It's a great way to juggle babysitting and working in the kitchen, especially if the kids are a little on the energetic side. Read a recipe, prepare your ingredients in the slow cooker, and kick back with the kids while you wait for dinner.

Slow Cooked Boneless Chicken Tenders
Deep fried chicken tenders aren't always the best healthy snack for the kids. Luckily, you can prepare savory chicken without all the boiling oil. Next time, make the chicken tenders right in the slow cooker. Try barbecue tenders for a tangy summer treat or buffalo tenders if your kids like a little spice. Prep is simple - just make sure the chicken tenders are covered with a sauce or broth for even cooking.

Season your boneless, skinless chicken tenders with salt and pepper and load them into the slow cooker with about 1/2 cup of chicken stock, barbecue or buffalo sauce. Cook on high for about three hours and voila! 

Slow Cooker Macaroni and Cheese
Another homemade classic, macaroni and cheese is even better when you make it yourself. Luckily, it's just as easy to make in a slow cooker as it is on the stovetop. Here's the trick: Cook your elbow macaroni beforehand and load it into the slow cooker. Add milk, butter, salt and pepper. For a little extra consistency, whisk two eggs together and put them into the slow cooker, along with some evaporated milk.

Add a generous amount of grated cheese (about four cups) to the mixture as you're loading the ingredients in, but save a little extra to add right to the top. Cover and cook on low heat for around 3 1/2 hours. If you want to give the dish a little punch, don't be afraid to mix in veggies like sun dried tomatoes, peas or diced bell peppers. Meats like cubes of chicken or sliced kielbasa work well, too.
